Easy Chocolate Eclair Squares

Easy Chocolate Éclair Squares Recipe 1 package vanilla pudding, such as Jell-O Vanilla Flavor Instant Pudding 2 cups cold milk, divided One 8-ounce tub Cool Whip Whipped Topping, thawed 22 Honey Maid Honey Grahams 1/2 cup unsweetened chocolate 1/4 cup butter 1 1/2 cups powdered sugar

What You Need

1        pkg.  (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
2        cups  cold milk, divided
1        tub  (8 oz.) COOL WHIP Whipped Topping, thawed
22      HONEY MAID Honey Grahams
1        pkg.  (4 oz.) BAKER'S Unsweetened Chocolate
1/4     cup  butter
1-1/2   cups  powdered sugar

Make It

BEAT pudding mix and 1-3/4 cups milk in large bowl with whisk 2 min. Stir in COOL WHIP. Layer about 1/3 of the grahams and half the COOL WHIP mixture in 13x9-inch pan, breaking grahams as necessary to fit; repeat layers. Top with remaining grahams.
MICROWAVE chocolate and butter in medium microwaveable bowl on HIGH 1-1/2 min., stirring after 1 min. Stir until chocolate is completely melted. Add sugar and remaining milk; stir until well blended. Immediately spread over grahams.
REFRIGERATE 4 hours.

Easy Pumpkin Roll Dessert

Easy Pumpkin Roll Dessert
Cake Ingredients:
  • 3 eggs
  • 1 cup sugar
  • 2/3 cup canned pumpkin
  • 1 tsp. lemon juice
  • 3/4 cup all-purpose flour 
  • 1 tsp. baking powder
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground cloves
  • powdered sugar, for rolling
Filling Ingredients:
  • 1 (8-oz) Neufchatel cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp. vanilla 
Directions:
  1. Grease a jelly roll pan (or use a large sheet of parchment paper that comes over edges of pan). Preheat oven to 350º. 
  2. Cream eggs and sugar in a mixing bowl. Fold in the canned pumpkin and lemon juice. Add the the flour, baking powder, cinnamon, nutmeg, ginger and cloves. Mix well. Pour into prepared pan, making sure to spread into an even layer. 
  3. Bake in preheated oven for 15 minutes, or until toothpick comes out clean. Quickly remove from the pan by turning upside down onto a large kitchen towel sprinkled with powdered sugar. (Or if you used parchment paper, pull parchment off pan and flip over onto towel coated with powdered sugar.) 
  4. Immediately roll the cake with the towel right inside. Cool in the towel on the counter. While cooling, cream together filling ingredients. 
  5. When the cake is cool, unroll and spread with filling. Re-roll (without the towel) and cut into slices. Top with a dollop of whipped cream or a sprinkling of powdered sugar. If not serving right away, wrap up in tin foil and store in refrigerator. This makes a great dessert that you can make ahead of time!

Crazy Easy Thanksgiving Turkey Cookie Dessert

 Ingredients

  • Golden Double Stuf Oreos
  • Round candy or dried fruit for eyes
  • Candy corn
  • Red fruit strips

Instructions

  1. Stick six or so candy corn into the Oreo cream for the tail.
  2. Apply eyes with cream cheese or similar sticky substance.
  3. Cut fruit strip into a long triangle and wrap it around one piece of candy corn.
  4. Stick the candy corn nose on the Oreo.
